I’m a huge fan of The Great British Bake Off – a group of amateur bakers from all over UK were selected to tackle the weekly baking challenges from easy bread sticks to whopping Opera Cakes. I couldn’t help but join in the “bake off” online with my Earl Grey Tea cupcake which was ranked #11 in the first week, Woohoo! Click here for the recipe. The Great British Bake Off became the nation’s favourite TV show and I am so looking forward to the next season!

Today’s post is dedicated to the classic Lemon Drizzle Cake – it’s no showstopper but it’s a wow factor in citrussy flavour and fluffy texture.

I’ve used the simple recipe from Paul Hollywood’s book How To Bake – “Mrs Post’s Lemon Drizzle Cake”. The key ingredient is the lemon curd which gives more depth in flavour than lemon juice. Do go for a good quality lemon curd like the English Provender Co. Luxury Lemon Curd. – a rich and tangy flavour that keeps the cake perfectly moist.
