One of my weaknesses is blue cheese. They complement salads well mixed with spinach and pine nuts, and also taste delicious in mushroom omelettes.
How about attempting to bake Blue Cheese & Spinach muffins?
I’ve found this great recipe from the Good House Keeping website for Cheesy Spinach Muffins, I’ve replaced the Parmesan/Cheddar with Shepherd’s Purse Yorkshire Blue cheese.
Note: The Blue Cheese & Spinach muffins were so delicious that they disappeared within minutes.. before I had a chance to take a snap of the final result (hence no picture).
