Golden Financiers


My last bake (Creme Brulee) had left me with 6 egg whites and I had couple of days to decide what to do with them – Macaroons? Chiffon cake? Lemon meringue pie? The list is endless!

In the end I chose to make Financiers – sweet and spongy french cakes made with a small amount of butter, icing sugar, flour, ground almonds, loads of egg whites and vanilla extract for extra sweetness.

A Financier is traditionally shaped like a bar of gold and deemed popular in the financial district of Paris. Oh la la!
