I love my lemon cupcake very lemony and sweet. The tip is to add 1 lemon zest, a bit of juice in the batter and some lemon curd for the filling. I make cream cheese icing for topping with a touch of vanilla extract.
Spreading the cream cheese icing with a knife by hand can be difficult but the effect is beautiful. My handy Hummingbird baking book shows me how to do this.
